Seasonal dining at Mint ∙ Tewkesbury Park

There are plenty of reasons to make your way to Tewkesbury Park, but for anyone who loves good food, Mint Restaurant deserves to be very high on the list.

Set within the beautiful Gloucestershire hotel, Mint Restaurant is the home of Executive Chef Anuj Thakur and his award-winning team, where menus are led by the seasons, locally sourced ingredients, and the very best of British produce, with Anuj’s own heritage and experience bringing plenty of interesting flavours and influences into the mix.

∙ ALWAYS SOMETHING NEW TO TRY ∙

One of the things we particularly like about Mint Restaurant is that the menus don’t stand still. Seasonality is at the heart of the restaurant, so there’s always a reason to come back and discover what Anuj and his team have been creating. The approach combines great British produce with flavours and ideas from further afield, resulting in food that feels exciting and contemporary without becoming unnecessarily complicated.

The presentation is rather special, too. Mint Restaurant describes its dishes as works of art, and there’s a real sense that the kitchen wants each plate to be as interesting to look at as it is to eat.

∙ SUMMER ON A PLATE ∙

The current Summer Tasting Menu, priced at £70 per person, is a brilliant example of what Mint Restaurant does so well.

Following an amuse bouche and Mint Restaurant’s Bread Box of homemade sourdough, seeded crispy lavash, and smoked paprika and herb butter, the menu moves through a series of beautifully considered courses.

There’s lobster and Scottish salmon raviolo with Exmoor caviar, coconut and tamarind shellfish broth, compressed cucumber, and fennel crisp, followed by a lightly spiced lamb brioche with coriander chutney, sweet coconut yoghurt, and pomegranate.

Local produce gets its moment with a colourful beetroot and goat’s cheese tart featuring golden, candy, and red beetroot alongside red onion chutney and whipped Rosary Ash goat’s cheese.

The main course brings Cotswold free-range chicken served in several ways, with chicken supreme roulade, tamarind-glazed confit leg, dukkah crumb, pea and feta croquette, wilted spinach, and a korma-flavoured chicken velouté.

There’s then a refreshing lemon and yuzu frost before a properly summery finale of English berries with mint and matcha parfait, meringue, macerated berries, and strawberry sorbet.

Tea or coffee and petits fours round everything off rather nicely.

∙ VEGETARIANS DON’T MISS OUT ∙

We always appreciate a restaurant where the vegetarian option feels as carefully considered as the main menu, rather than like a collection of substitutions, and Mint Restaurant has created an entire Summer Vegetarian Tasting Menu, also priced at £70 per person.

After the amuse bouche and Bread Box, things get underway with The Real Onion Bhaji, bringing together red onion, spring onion, chive, and leek with tamarind ketchup.

There’s then a pulled jackfruit brioche with coriander chutney, sweet coconut yoghurt, and pomegranate, followed by the beetroot and Rosary Ash goat’s cheese tart.

For the main course, green pea, spinach, and ricotta agnolotti comes with sweet pea and broad bean velouté, pesto dressing, toasted pine nuts, and Parmigiano Reggiano.

The same refreshing lemon and yuzu frost and English summer berry dessert complete the experience before tea, coffee, and petits fours.

∙ MAKE AN EVENING OF IT ∙

Of course, a tasting menu is as much about the experience as any individual dish, and Mint Restaurant offers the option of adding a matching wine flight, carefully selected to complement the different flavours as you work your way through the menu.

And while Mint Restaurant makes a very good reason to book a stay at Tewkesbury Park, you certainly don’t need to be staying at the hotel to enjoy the food. It’s worth thinking of Mint Restaurant as a dining destination in its own right, whether you’re celebrating something special or simply fancy making dinner the main event.

There are plenty of other opportunities to experience Anuj’s cooking, too, with lunch and evening menus alongside the tasting menus, as well as Sunday dining. The hotel’s Sunday lunch celebrates seasonal, locally sourced produce and is served from 12pm to 3pm. Vegan, vegetarian, and gluten-free options are also available.

∙ STAY THE NIGHT ∙

If six courses and a wine flight have you thinking that the journey home sounds distinctly less appealing, Tewkesbury Park has that covered.

Several of the hotel’s current breaks incorporate dinner at Mint Restaurant, but the Blossom & Bubbles Breakaway is particularly tempting for food lovers. It includes an overnight stay in a Touch of Class room with private terrace, Prosecco waiting in the room, MINT’s six-course tasting menu, and a Cotswold breakfast the following morning, with prices currently starting from £166.50 per person based on two sharing. A matching wine flight can be added for £40 per person. The offer is available for stays until 30 September 2026, subject to availability and terms.

There’s also the option to combine dinner with spa time, golf, or a longer stay, making it very easy to turn an evening at Mint Restaurant into a proper Tewkesbury Park escape.

∙ A RESTAURANT WORTH RETURNING TO ∙

What makes Mint Restaurant particularly interesting is that this isn’t a restaurant where you visit once, find your favourite dish, and expect it to be there forever.

The changing seasons give Anuj and his team the opportunity to keep creating, introducing new ingredients, flavours, combinations, and ideas throughout the year. Summer might mean English berries, Cotswold chicken, fresh peas, beetroot, cucumber, and yuzu, but another season brings an entirely different reason to return.

And we rather like restaurants that keep us wondering what’s coming next.
